Guilt Free Pancakes!
2 Tablespoons Knudsen® Butter – Salted (Melted)
4 Eggs – Separated

1 Cup (1/2 Pt.) Knudsen® Cottage Cheese
½ Cup Sifted Flour
¼ Teaspoon Salt
Low Fat Fruit Yogurt or other Low Calorie
Preheat a lightly oiled griddle or frying pan. Put all ingredients except egg whites and yogurt or topping in mixing bowl and blend on low speed until Knudsen cottage Cheese is smooth. Whip egg whites until stiff but not dry. Fold into cheese mixture. Drop by tablespoons onto lightly oiled griddle or frying pan. Shape into circles with back of spoon. Turn when underside is lightly browned. Serve with low fat fruit yogurt or other low-calorie topping. Makes 16 to 20 three-inch pancakes.
