KNUDSEN BUTTERMILK BRAN MUFFINS

1 Egg
¾ Cup Knudsen Buttermilk
1/3 Cup Light Molasses
2 Cups Whole Bran
2/3 Cup Sifted Flour
1/3 Cup Sugar
1 Teaspoon Baking Powder
½ Teaspoon Baking Soda
½ Teaspoon Salt
1/8 to ¼ Teaspoon Allspice
1/3 Cup Raisins
¼ Cup (1/2 stick) Knudsen Butter - Salted
 
Preheat oven to 400°F. Butter a 12 cup muffin pan or line with paper baking cups. Beat egg in medium bowl. Blend in Knudsen Buttermilk and molasses. Stir in bran and let stand 3 to 5 minutes. Measure flour and mix with sugar, baking powder, baking soda, salt and allspice. Stir in raisins. Stir in melted Knudsen Butter into bran mixture. Add dry ingredients all at once, mixing just until moistened. Fill each cup 2/3 full in prepared muffin pan. Bake 20 to 25 minutes. Makes 12 medium muffins.
